Weekly Recipe - Individual Chicken Pizzas

Ingredients

  • 1 can refrigerated biscuits, uncooked
  • 1 cup corn meal
  • 1/4-1/2 cup vegetable cream cheese
  • 2 cups frozen chopped broccoli
  • 1/4 cup diced tomato
  • 5 oz can chunk chicken breast in water
  • Dried oregano, optional
  • 1 cup shredded mozzarella cheese

Method

Preheat oven per biscuit can directions. Sprinkle countertop with corn meal. Roll each individual biscuit out to approximately 3-4 inches round on top of corn meal, but do not flip over. Place each rolled biscuit on a large baking sheet and cook per package directions. Set oven to 400 degrees. Allow biscuits to cool slightly. Top each biscuit with cream cheese, chopped broccoli, tomato, and chicken. If desired, sprinkle with dried oregano to taste. Cover each biscuit with mozzarella cheese. Bake for 10 minutes or until cheese has melted.

Notes: These quick and easy to hold pizzas are healthy and fun. Turn dinner time into fun time by including the kids in preparing the meal. Change up the veggies for variety or to suit the little one's taste.

Simple Exercises For Losing Weight

Lack of sleep can hinder your performance when exercising so be sure to get a minimum of 7-8 hours of sleep. Also keep a steady sleep pattern. Your body will be able to perform at its best by doing so.

Start by taking ten minute walks twice a day. It's preferred to take a walk in the morning after breakfast as it helps get your metabolism to start burning fat for the day. Gradually start walking longer and a bit faster each day

Always be sure to eat 3-4 hours before you start exercising. A good choice is to eat a low fat meal and can have other foods such as fruit, yogurt, fruit juice, cereal (no kid's cereal that contains a lot of sugar), etc. This will give you energy that is needed for your workout and help optimize fat burning. Drink a good amount of water during breaks.

Forums in my oppinion are the best ever for support and motivation. There are many forums dedicated for members to share each other's experiences and resources. Alot of them even have personal diarys or journals which you can post a log daily of your progress and your efforts to achieve your goals. Feel free to show before and after pictures of your progress. This will also inspire others to work harder as well as give them motivation to. There are alot of friendly people who are just like you in your same situation.

Social sites such as Face Book, Tweeter, Digg, etc. are good ways to show everyone your progress as well as meet others and view their progress as well. You will make new friends this way which will help get you motivated. There's no since in being alone on your journey so why not get some extra support from others that are in your shoes to?

Don't be shy to tell your friends and family about your goals. Discuss with them how you going to change your lifestyle to accomplish your goal. True friends and your family will give their support. If you have a friend that wants to lose weight just like you then by all means offer to work together. This will help keep both of you motivated since you will have a personal partner involved in your journey.

Feed your desire to lose weight. Think of what you would be wearing if you were at your desired weight. How more attractive you will look towards men/women. Weekly Recipe - Fish Fillets with Black Bean Compote

6 Alaska pollock, cod, or sole fillets (4 to 6 oz. each), fresh, thawed or frozen
4 teaspoons olive, canola, peanut or grapeseed oil, divided
1 white onion, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 can (15 oz.) black beans, rinsed and drained
1 can (14 oz.) diced tomatoes
1 can (4 oz.) mild diced green chiles
2 Tablespoons fresh lime juice
Salt and pepper, to taste

Rinse any ice glaze from frozen Alaska Pollock fillets under cold water; pat dry with paper towel. Heat a heavy nonstick skillet over medium-high heat. Brush both sides of fillets with 2 teaspoons oil. Place fillets in heated skillet and cook, uncovered, about 3 minutes, until browned. Shake pan occasionally to keep fish from sticking.

Turn fillets over; cover pan tightly and reduce heat to medium. Cook an additional 2 to 5 minutes. Cook just until fish is opaque throughout. Remove from skillet and keep warm.

In the same skillet, cook onion and garlic in remaining oil over medium heat until soft, about 5 minutes. Stir in cumin; cook 1 minute. Add beans, tomatoes, and chiles. Cover and cook over low heat for 10 minutes. Stir in lime juice and season to taste with salt and pepper. Serve seafood fillets over the black bean compote.
